We needed to use up some green tomatoes at the end of the season. This recipe turned out well as a healthy option. Recipe:
2 c. chopped green tomatoes 1/4 c. oil (we like grapeseed) 1/3 c. honey 1 c. milk 2 c. whole wheat flour 1 T. baking powder 1/2 tsp. salt 2 tsp. cinnamon 1 egg Combine dry ingredients. Beat egg and then other wet ingredients and add to dry. Stir enough to moisten batter. Bake at 400 F for approx 25 mins. Makes 12 muffins. Adapted from The Practical Produce Cookbook
